Naofumi Ito (Nao) is the chef of the restaurant, has trained in Italy (Grand Hotel Firenze, Siena, Sicilia as a chef) also in New Zealand (Stanford Plaza Hotel, Sheraton Hotel, as a Hotel Staff & Prada Americas cup chellenge 2003 as a sous-chef).
